ALMOND JOY COOKIES INGREDIENTS
3/4 cup Roasted Almond Oil
1 tsp. Almond Extract
2 eggs
3/4 cup sugar
3/4 cup packed brown sugar
2 ½ cups all-purpose flour
1/4 tsp. salt
1 tsp. baking soda
4 oz. Chocolate Chips
4 oz Sliced Almonds - toasted
4 oz unsweetened coconut (can use sweetened if you prefer)
METHOD OF PREP:
Heat oven to 375 degrees Fahrenheit.
In a large mixing bowl or stand mixer, combine olive oil, vanilla, eggs, sugar, and brown sugar.
Add flour, salt, and baking soda to bowl and mix until ingredients are incorporated, and you have a smooth dough.
Fold chocolate chips, almonds & coconut into the dough with a spatula.
Using a baking sheet with a silicone baking mat or a sheet of parchment paper.
Scoop into walnut-sized balls and place 1 inch apart on the baking sheet.
Bake cookies at 375 degrees F for 9-12 minutes until lightly browned. Remove to a wire rack to cool.
Serve the almond joy cookies while they are still warm or let them cool completely and store in an airtight container on the counter for up to five days or freeze for a treat anytime!
