If you are like us, in your fridge, you probably have leftover bits of various cheeses. You know.. that 2" piece of Brie, the 1/4# of Taleggio, a smidgen of aged cheddar, that leftover little wedge of the new goat cheese you bought over the weekend. Well, never fear, with this recipe, none of your cheese will go to waste. In a quick ten minutes, you can have this most delicious cheese spread whipped up!

Ingredients

  • ½ pound of cheese pieces

  • 1 garlic clove

  • 1/4 cup dry white wine

  • 1-2-Tablespoons of your favorite chopped fresh herbs (if desired)

  • Fresh crushed black pepper

  • Salt - optional

Method of Prep

  1. Put the cheese pieces in the bowl of a food processor, add garlic clove, 1/4 cup of white wine, herbs and black pepper. Salt is not usually needed, however, taste the mixture and add if you feel it is needed.

  2. Process until the mixture is creamy (it’s ok if there are some small chunks of cheese left. Using a spatula, scrape out the processor bowl into a covered container. The Fromage Fort can be used immediately or saved for later use.

  3. Depending on how long you have had the leftover cheese pieces, it can stay in the fridge for up to two weeks.

  4. Served cold, room temp or spread on good bread and broil for a few minutes (so yummy).

Tip: If you use blue cheese, be aware in most cases the entire mixture will have a blue flavor as blue cheese is generally stronger and more pungent in flavor.
